Not a lot of time required here and no expensive ingredients, either. I use whatever white wine I have and then make this dinner when chicken thighs are on sale. It's also easy to make increase or decrease depending on how many people you need to feed. You really can't ask for an easier meal!
Well, ok, tacos are easier, but not as classy!
Oh, and because I'm all about making things simple, I'll give you the original recipe to my Groundhog Dinner below so you don't have to write it down while you're watching the video.

P.S. If you're looking for a good crock pot, I just bought this one for a friend's daughter as a shower gift. I wish mine had the ability to lock the lid on so that traveling with a full pot was easier!
Groundhog Dinner in the Crock Pot
4-5 slices of bacon
1 med onion, thinly sliced
4 cloves of garlic, minced
1 tsp dried thyme
1 tsp fennel seeds
1 tsp freshly ground pepper
1 bay leaf
1 C white wine
1 28 oz can diced tomatoes with juice
1 tsp salt
10 bone-in chicken thighs, skin removed
Cook bacon in a skillet over medium heat until crisp. Transfer to paper towels to drain. Crumble when cool.
Drain off all but 2 Tbls fat from the pan. Add onion and cook over medium heat, stirring until softened. Add garlic, thyme, fennel, pepper and bay leaf and cook, stirring, for 1 minute. Add wine, bring to a boil and boil for 2 minutes. Add tomatoes and their juice and salt, stir well.
Place chicken thighs in a slow cooker. Sprinkle the bacon over the chicken. Pour the tomato mixture over the chicken. Cover and cook until the chicken is very tender, about 3 hours on high or 6 hours on low. Remove the bay leaf before serving.
Serve over rice.
The next time you sit down to meal plan, consider adding this to your menu. It's easy and inexpensive and it really does taste good!
